Coconut-Sofrito Sauce
Creamy coconut sauce with sautéed vegetables, perfect for adding a Caribbean touch to your fish.

🥘 Ingredients
- 1 onion
- 1 red pepper
- 4 cloves garlic
- 1 medium tomato
- 4-5 cilantro leaves
- 1 can unsweetened coconut milk
- Salt and pepper to taste
- Butter
- Lime
- Annato oil (optional, for enhanced color)
👨🍳 Preparation

Small dice all vegetables and sauté in oil (recommended annato oil for enhanced color). Cook on medium-low heat until moisture is evaporated.

Add coconut milk and simmer for 20 minutes.

Blend mix in blender or with immersion blender. Season with salt and pepper.

Return puree to pan and add knobs of butter, whisking to emulsify.

Season with salt, pepper and lime to taste.
